The Feathers hotel in the Cotswolds town of Woodstock has reopened following a multi-million pound renovation.
The Grade-II listed hotel was acquired by local property developer Daniel Ede last year, through his business The Ede Homes Group.
Each of the Grade-II listed hotel’s 23 rooms and suites has been reimagined by interiors firm AGC BTR. The property is home to three feature suites – the Robin, Goldcrest and Nightingale – which each boast large living spaces and curated art from local artists.
The ground floor is home to The Nest, a new relaxed brasserie that extends out onto an expansive terrace. Open to both hotel guests and the general public, The Nest is led by head chef Luke Rawicki who has designed a menu of traditional British fare.
Hero dishes include beetroot gnocchi with goats cheese, anise honey and tender stem; stuffed saddle of South West Lamb served with peas, mint salsa verde and jersey royals; and a dessert of set tonka bean custard blended with English strawberries, Cotswolds elderflower and lemon.
During the summer months, the hotel’s expansive terrace houses an Argentinian BBQ which will serve a selection of meat and fish including pork chop with charred aubergine and apple, half lobster with new potatoes and salsa verde or charred spring greens with za’atar, coconut labneh and a savoury granola.
The Aviary Bar at The Feathers serves housemade cocktails, while guests can also enjoy a selection of locally sourced spirits and ciders alongside Cotswold cider, gin and cream liqueur.
The gallery wall within the hotel’s study displays artwork from Caroline Parkes and Louisa Foster, while in the restaurant and bar, paintings from Morgan Jackson and Katie-Lark Ratcliffe are displayed.
The Ede Homes Group already owns hospitality properties no192 in Oxford and Old Abbey House in Abingdon, as well as developing new residential properties in the region.
